INGREDIENTS:

- 300 g gluten-free oatmeal
- 300 ml Kefir
- 3 medium ripe bananas
- 3 eggs
- 50 g coconut oil
- 50 g Dutch cocoa (I used Van Houten cocoa)
- 80 g dark chocolate (80% cocoa)
- 20 g walnuts (chopped and roasted in the oven for 6 minutes)
- 2 tsp lemon essence
- The zest from 1 lemon
- 1 tsp of baking soda
- 1 tsp of baking powder
- ¼ tsp of salt.
Ingredients for the quince puree:

- 3 quinces
- 500 ml of water.
The result: 700 g quince puree
Note: I will suggest making the quince puree 1 day before making the muffins.
INSTRUCTIONS for these heavenly quince puree muffins:
Make the quince puree
1. Wash the quinces well, then remove the core and seeds and cut them into cubes.

2. Put water in a pot, add the quince cubes, and simmer until they become soft. Let them cool for 10 minutes, let only 60 ml of the boiled water then blend them.



3. Pour it into a jar and leave it to cool at room temperature, then cover the jar with a lid and put it in the fridge until ready to use.
Make the muffins:
4. Melt separately the coconut oil and half of the dark chocolate and put aside.
5. Chop the walnuts with a sharp knife, then put them on a tray lined with baking paper and out in the oven for 5 minutes, after this time, let them cool for another 5 minutes.
6. Add all the ingredients to the robot, except the baking powder, baking soda, salt, and walnuts, and mix until incorporated.

7. Add the baking powder, baking soda, salt, and chopped and toasted walnuts and mix with a spatula until incorporated.

8. Pour 1 tbsp of composition into each mold lined with muffin sheets, then add 1 tsp of quince puree, cover with another tbsp of composition, and place in the preheated oven at 185 degrees for 55 minutes.


9. Make the toothpick test, and if they are cooked, take them out of the oven and let them cool for at least 2 hours.








Alternative ingredients for those with dietary restrictions:
If you’re lactose intolerant, you can substitute the kefir with non-dairy alternatives like almond milk or coconut milk.
Similarly, if nuts are an issue, feel free to replace the walnuts with seeds like pumpkin or sunflower.
And for those who cannot have chocolate, try substituting it with dried fruits such as cranberries or raisins.
