INGREDIENTS:

- 500 ml vegan condensed milk (check out my homemade vegan condensed milk recipe)
- 7 tbsp unsweetened raw Dutch cacao (I used Van Houten Intense Deep Black Dutch cocoa)
- 3 tsp of lemon zest
- 70 g coconut oil (extra virgin)
- 150 g passion fruit & mango curd (check out my homemade sugar-free, passion fruit and mango curd recipe)
- 100 g unsweetened white chocolate.
Ingredients for 150 g passion fruit and mango curd:
- ⅔ mango pulp
- 3 passion fruits
- 15 g Stevia
- 2 egg yolks + 1 whole egg
- 30 g butter (80%)
- Pinch of salt.
Ingredients for the colored mirror glaze:

- 250 ml vegan condensed milk
- 70 ml whipped cream
- 30 g Dutch cocoa
- 50 g unsweetened white chocolate
- 8 g gelatine
- White bio food coloring
- Yellow bio food coloring
- Orange bio food coloring.

INSTRUCTIONS for This Fabulous Passion Fruit and Mango Curd:
1. Divide the ingredients into 2: put ½ of the condensed milk, ½ lemon zest, and Dutch cocoa in a pot and mix until smooth, then add the 35 g of coconut oil and bring to a boil.



2. Put in a 2nd pot the other half of the condensed milk and the remaining lemon zest and mix until smooth, add also the other 35 g of coconut oil, and the white chocolate, and bring to a boil. At the end, also add 100 g of mango curd and incorporate.


3. Remove from the heat and leave to cool, then wrap the 2 compositions in cling film, and place them in the freezer for 2 hours.

4. Take the truffles out of the fridge, take 1 tablespoon of the composition, make a hole with your finger inside the composition, and add ⅔ tsp of passion fruit and mango curd, then start shaping them into balls (this procedure is for the composition with black Dutch cocoa).



NOTE: The procedure must be done quickly because they melt in the hand.
5. The same procedure goes for the composition of mango and passion fruit curd.


NOTE 2: Here it seems that they weren’t too solid, so I advise you to add instead of 35g, 6-70 g of coconut oil!
6. Put the truffles in the fridge for another 30 minutes.
7. Now, dip the truffle balls in white and dark chocolate (melted and tempered), or roll in coconut flakes, ground, and baked almonds, or sifted Dutch cocoa and place them on baking paper, then put them in the fridge for another 30 minutes.

You can also pour colored mirror glaze on them.
