- 250 g Quinoa
- 200 g wild rice
- The seeds from 1 pomegranate (1 cup)
- 100 g feta cheese
- 40 g walnut kernels
- 10-12 baby spinach leefs
- 1 1/2 cups of Iceberg salad.

- 1 medium shallot
- 150 ml orange juice (freshly squeezed)
- 2 tbsps of water
- 1 tsp of apple vinegar
- 2 tsp of honey
- 2 tsp extra virgin oil
- ¼ tsp salt
- ¼ tsp ground pepper.
INSTRUCTIONS for this healthy, colorful, and delicious Quinoa Salad:
1. Start by rinsing the quinoa under cold water, then, combine one part quinoa with two parts water in a saucepan. Bring it to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes until the quinoa is tender. Once cooked, set aside to cool.
2. Rinse the wild rice thoroughly then cook it according to package instructions, and set aside to cool.
3. Toasting walnuts enhances their flavor and adds a delightful crunch to your salad. Simply spread the walnuts on a baking sheet and toast them in a preheated oven at 180°C for about 8-10 minutes.
4. Wash very well the spinach and the Iceberg salad, and cut the feta cheese into cubes of 2 cm.
5. Cut the pomegranate in half, and with the help of a spoon start removing the seeds.
