
On hot summer days, when laziness seems to overcome any desire to cook, a quick passion fruit custard can be the perfect rescue. This simple but exotic dessert combines the refined taste of passion fruit with the tanginess of the lime.

What is the curd?
Fruit curd is a kind of cream/topping based on eggs, made from different fruits.
Typically, this cream is made from citrus fruits – lemons, limes, oranges, tangerines, but it also can be made from berries (blueberries, raspberries, blackberries), or tropical fruits like mango, papaya, passion fruit, or a mix of fruits.

The origin of this cream is English and appeared in the 19th century, being used as an alternative to jams served with scones.
Uses:
It can be used as such, or in different cakes, tarts, no-bake cheesecakes, pancakes, muffins, and ice creams, but also spread on bread with butter. That’s why it falls under the category of spreads.
It has a very intense, tangy taste because it uses a significant amount of lime juice and peel, also it’s perfumed from the passion fruit, believe me: this is a sensational combo!
How and for how long, do we preserve the curd?
- In vacuum: 3 weeks at +4 degrees.
- In the freezer: 3/4 months at -18 degrees.
- In an airtight container in the fridge: 7-10 days.
INGREDIENTS:

- The juice from 6 limes (220 ml)
- The zest of the limes
- 3 passion fruits
- 80 g Stevia
- 4 egg yolks + 1 whole egg
- 70 g butter (80%)
- Pinch of salt.

INSTRUCTIONS for this perfumed lime and passion fruit curd:
1. Grate the zest from the limes (preferably organic), then squeeze them.
2, Put the zest and lime juice in a small saucepan with the passion fruit seeds, the egg yolks, the whole egg, the Stevia sweetener, and the salt, then put them on the fire on low-medium fire and let it boil. Boil the cream until it starts to thicken, about 2-3 minutes.


3. During this time I mixed continuously until the composition became a thick cream, like a pudding. I took it off the heat, let it cool for 2 minutes, then incorporated the butter until smooth.

4. Strain the cream obtained so that no traces of lime zest or any lumps remain

5. Place a clean foil film on top to prevent a crust from forming and leave the dessert to cool.
6. After it has cooled, cover the jar with the lid and refrigerate the dessert until use.
I obtained a delicious, aromatic, fine lime and passion fruit curd. Now the cream is liquid, but it thickens more by staying in the fridge (obligatory!).Â
The melted butter in it will solidify in the cold! Refrigerate for a few hours. Moreover, the curd can be kept in the refrigerator for 7-10 days.
