As always, before getting to the actual recipe, I’ll talk a little bit about the main ingredients:
Hazelnut Butter: A Nutty Delight

The Complete Plant-Based Recipe Cookbook – 200+ Vegan Recipes
INGREDIENTS:
Ingredients for the hazelnut butter:

- 60 g raw hazelnuts
- 10 ml oil.
Ingredients for the truffles:

- 250 g Mascarpone (at room temperature)
- 100 g crushed Oreo biscuits (without the cream)
- 200 g digestive biscuits
- 200 g melted dark chocolate (80%)
- 30 g hazelnut butter (homemade)
- 1 tbsp fresh basil leaves
- 2 tbsp chocolate liqueur
- 2 tsp instant coffee
- 1 tsp lemon zest.
Toppings of your choice:
- 50 g Dutch black cocoa
- 50 g raw cocoa
- Â 60 g coconut flakes
- Â 50 g almond flakes
- 100 g unsweetened white chocolate
- 40 g dark chocolate.
INSTRUCTIONS:
Make the hazelnut butter:
1. Preheat the oven to 180C.
2. Put the hazelnuts on baking paper and keep them in the oven for 12 minutes.
3. Remove the hazelnuts from the oven and let them cool.

4. Rub the hazelnuts against a kitchen towel to remove their skins.

5. Put the hazelnuts in a food processor and pulse until they are finely ground, then add the oil, step by step, and continue pulsing for 4 minutes until it takes the form of a paste.


Make the truffles:
6. Mix with the help of a spatula Mascarpone, melted and cooled dark chocolate, coffee, lemon zest, chopped basil, and crushed biscuits, then refrigerate until hardened.



7. After they harden, take 1 tablespoon of the composition, make a hole with your finger in the middle of the composition, and pour a small amount of chocolate liqueur, fold them, and start shaping them into balls.
8. The same procedure will be done for the hazelnut butter filling.


9. Roll each truffle in the toppings of your choice, then put the truffles in the fridge for at least 1 hour to harden (I will suggest it will be better overnight).
10. Melt the white chocolate and dip the truffles (100 g will be enough for 6 truffles), then put up in the fridge for 1 hour to harden. Take them out of the fridge, melt some dark chocolate, and drizzle over the white chocolate.


NOTE: Don’t pour too much liqueur, otherwise you will not be able to fold it, and the liqueur will spill out. The same thing goes for the vegan butter!
