The Complete Plant-Based Recipe Cookbook – 200+ Vegan Recipes
INGREDIENTS for these fabulous almond truffles:

- 100 g almonds
- 40 g walnuts
- 400 g vegan condensed milkÂ
- 30 g raisins
- 10 g instant coffee
- 4 tbsp Cognac.
Ingredients for decoration:

- 100 g unsweetened white chocolate
- 100 g dark chocolate (80%).
- 20 g almonds (chopped)
- 1 g edible gold powder
- 1 g edible silver powder.
INSTRUCTIONS:
1. Boil the almonds for about 10 minutes to remove the skin more easily. Then chopp and bake them alongside the walnuts for about 6 minutes in the oven.


2. Put the vegan condensed milk in a pan, add the coffee, and incorporate it perfectly, then add the almonds and the raisins, in the end, pour the cognac and incorporate, then let it simmer for another 2-3 minutes and mix continuously.


3. Take it off the heat and let it cool for 10 minutes, then put the mixture in the fridge for 30 minutes.
4. Take the truffles out of the fridge, take 1 tablespoon of the composition, and start shaping them into balls.


5. Put the truffles in the freezer for another 30 minutes.
6. Meanwhile, melt the chocolate on the Bain Marie, then let it cool to room temperature.
7. Now, dip the truffle balls in white and dark chocolate (melted and tempered), and place them on baking paper, sprinkle the chopped almonds and sieve edible gold and silver dust, then put them in the fridge for another 60 minutes.
