1st Layer – Dutch Cocoa
2nd Layer – Passion Fruit and Mango Curd
Prep Time: 10 minutes
Cooking Time: 30 minutes
Total Time: 40 minutes
Chilling Time: 48 hours

INGREDIENTS:

Ingredients for the Dutch cocoa layer:
- 380 g unsweetened milk powder
- 60 g Stevia
- 180 g butter (80%)Â
- 50 g coconut oil
- 80 g Dutch cocoa (I used Van Houten Intense Deep Black Dutch cocoa)
- 1 tsp lemon zest
- ½ tsp lemon essence
- 2 tbsp fresh mint leaves (chopped)
- 1 tbsp pistachio (chopped and baked)
- 150 ml of water.
Ingredients for the passion fruit and mango curd layer:
- 380 g unsweetened milk powder
- 60 g Stevia
- 180 g butter (80%)Â
- 50 g coconut oil
- 250 g passion fruit and mango curd(find here my homemade recipe)
- 80 ml of water.
Ingredients for 250 g passion fruit and mango curd:
- 1 mango
- 3 passion fruits
- 30 g Stevia
- 4 egg yolks + 1 whole egg
- 70 g butter (80%)
- Pinch of salt.
INSTRUCTIONS for this delicious Dutch cocoa, passion fruit curd, and mango fudge:
Make the mint chocolate fudge:
1. Put the coconut oil, water, and Stevia on the fire. When it starts to boil (on low heat), leave it on the fire to simmer for another 5 minutes until the composition has the appearance of syrup.

2. Separately, sift the milk powder and the Dutch cocoa, add them to the syrup, and mix well so that there are no lumps.

3. At the end, add the lemon essence, lemon zest, and chopped mint leaves, then homogenize.

4. Line a small tray with baking paper or cling film and add the chocolate, then level it and leave it to cool (not in the fridge).

Make the passion fruit and mango curd layer:
5. Make the same procedures as at points 1 and 2, and at the end add the passion fruit and mango curd and homogenize.


6. Pour the passion fruit and mango curd layer over the chocolate fudge layer, let it aside at room temperature for 10 minutes, then put the tray in the fridge for at least 12 hours. It will be better for 48 hours.

Decoration:
After this cooling period, it slices perfectly. Cut bars or slices and serve them.











They can be decorated with mango slices, lemon zest, passion fruit mango curd, and mint leaves. You can also sift Dutch cocoa over them.

- Paired with your favorite hot beverage.
