
I love a well-marbled cheesecake. I’ve been wanting to make again a raspberry and blueberry cheesecake for a while, so I finally got around to it. And you know what? It was worth the wait!
If you’re looking for a dessert that’s sure to be a hit, look no further than my no-bake, sugar-free marbled raspberry, and blueberry cheesecake. This amazing marbled raspberry and blueberry cheesecake is the perfect treat for a warm summer day.
The combination of the sweet, refreshing berry filling with the rich, creamy cheesecake is sure to be a crowd-pleaser. It’s a great way to celebrate summer, whether it’s with family or friends!
This version of blueberry cheesecake is marbled with raspberry jam to give it that extra pop of color and flavor, all topped with a lot of fresh raspberries and blueberries. I think the combination will blow your mind!
Let’s talk a little bit about the 2 main ingredients: Raspberry and Blueberry.
Blueberry

Blueberries are a delicious, sweet fruit that is packed with healthy antioxidants. They’re also a great source of fiber, vitamins, and minerals.

Raspberry

Raspberry is a fruit with many health benefits. It contains very few calories and is rich in fiber, vitamins, and minerals.

INGREDIENTS for this marbled raspberry and blueberry cheesecake:

Base Ingredients:
- 350 g digestive biscuits
- 90 g unsweetened butter
- 1 tsp lemon essence.
Filling Ingredients:
- 500 g Ricotta
- 500 g Mascarpone
- 70 g Stevia sweetener
- 200 g unsweetened white chocolate
- 22 g of gelatin
- 120 ml of water for the gelatin
- 1tbsp lime juice
- The zest from a lime
- 10-12 fresh mint leaves.
Raspberry and Blueberry Jams Ingredients:
- 500 g fresh blueberries (will result in 300 g of puree)
- 500 g fresh raspberries (will result in 300 g of puree)
- 20 g of Stevia sweetener (10 g for each jam)
- 14 g of gelatin (7 g for each jam)
- 2 tsp of lime juice (1 tsp for each jam)
Decoration Ingredients:
- 300 g fresh blueberries
- 300 g fresh raspberries
- Pieces of white chocolate
- Edible flowers
- Lemon peel.
INSTRUCTIONS for this marbled raspberry and blueberry cheesecake:
Make the base:
1. Line the sides of a 21 cm round springform pan with acetylate foil and set aside until needed.
2. Crush the biscuits in a food processor.
3. Melt the butter in a saucepan.
4. In a bowl add the crushed biscuits, melted butter, and lemon essence and mix until the composition is homogeneous,
5. Place the composition thus obtained in the springform pan, press, and place in the freezer until the filling is ready.

Make the blueberry and raspberry jams/ purees:
6. Wash the blueberries and the raspberries, then put them in a saucepan, individually, add the sweetener and the lime juice, and simmer for about 10 minutes on medium/low heat, stirring constantly.

7. After it thickens, take the berries off the heat, blend them, and pass them through a sieve, individually, add the bloomed and melted gelatin, then let them cool to room temperature. Take aside 2 tbsp of each puree.

Make the filling:
8. Mealt the chocolate on Bain Marie, then let it cool at room temperature.
9. The gelatin is left to hydrate in 120 ml of water for 10 minutes.
10. In a bowl add the Mascarpone, Ricotta, and sweetener and mix for 1 minute.
11. Add the melted white chocolate, lime juice, lime zest, chopped mint, and bloomed gelatin (melted) and incorporate with a spatula, then put aside.


Assembling the Cake:
12. Remove the cheesecake from the freezer and pour over the biscuit base 9 tablespoons of the normal filling, on top of that pour 3 tablespoons of the filling with the blueberry puree, 3 tablespoons of the filling with the raspberry puree, and repeat the operation until the filling is finished.

13. In the end pour on top the puree put aside and with the help of a teaspoon start making swirls. Then, put it in the fridge overnight.

Decoration:
Take the cheesecake out of the fridge, and circularly place a layer of blueberries, one of raspberry, one of blueberry, one of raspberry, and in the middle, make a raspberry island.
You can also use as decoration white chocolate pieces, edible flowers, mint leaves, and lemon zest
