
One of the greatest joys at this time of the year is the wealth of fruits and vegetables that I take advantage of first by eating as many as possible, especially in their raw form, then I try to save and preserve them by turning them into jams.
I don’t make too many of a certain assortment, because I want to have a pantry full of everything.
A jar of homemade blueberry jam has a special flavor, a deep, simple aroma, and yet a complexity that conquers you from the first sip.
Whether you choose to eat it with a slice of bread and good butter or pair it with Greek yogurt, this homemade, sugar-free blueberry jam with basil, lime, and a hint of a surprise ingredient that you might not have thought that you could use in a jam, namely, cardamon, will have a fabulous taste.
If you want a sugar-free jam, without preservatives, that is natural, and with an amazing taste, then you can prepare it yourself at home.
You only need a few ingredients to get the most delicious low-carb blueberry jam, plus it’s sugar-free, which means it’ll be figure-friendly, too.
Its sweet-sour taste will win you over and every year you will prepare it according to this simple recipe.
This fabulous blueberry jam can also be eaten with pancakes, as an ingredient for various cakes and creams, as a topping for semolina with milk, rice with milk, or oatmeal.
Let’s dive a bit deeper into the importance of each ingredient.
Blueberries:

The star ingredient of my jam. Blueberries are packed with antioxidants and provide the perfect balance of sweetness and tartness.
Blueberries are crucial for this jam because they have a naturally sweet flavor, reducing the need for added sugar.
They’re also rich in vitamins: (vitamin A, vitamin B complex, vitamin C, vitamin E, and vitamin K), minerals (iron, phosphorus, calcium, magnesium, sodium, and potassium), and are a great source of fiber. Plus, their deep blue color gives the jam a visually appealing look.
Fresh apple juice:

This will serve as a natural sweetener in place of sugar. Apple juice not only enhances the flavor but also contributes to a smoother consistency.
Apple juice is a great natural sweetener that adds depth and complexity to the flavor of the jam. It also helps to soften the blueberries during the cooking process, resulting in a smoother, more spreadable jam.
Basil leaves:

These add a unique, aromatic twist to the jam. Basil is also known for its anti-inflammatory and antioxidant properties.
These leaves may seem like an unusual addition, but they do take this jam to another level. It has a sweet, slightly peppery flavor that pairs wonderfully with the sweetness of the blueberries.
Plus, it’s a great source of vitamin K, and it contains antioxidants that protect your body from free radicals.
Lime:

The acidity of lime cuts through the sweetness of the blueberries, adding a refreshing tanginess to the jam. It also aids in the preservation process.
The lime adds a much-needed tang to balance out the sweetness of the blueberries and apple juice. It also contains citric acid, which helps to preserve the jam and prevent bacteria growth.

Cardamom:

Total Time: 2 hours: 30 minutes
Servings: 1,85 kg blueberry jam
INGREDIENTS:

- 3 kg wild blueberries
- 1 l of freshly squeezed apple juice
- The juice from 2 limes
- Lime Zest from the 2 limes
- 8 fresh basil leaves
- ¼ teaspoon of cardamon.
INSTRUCTIONS for this fabulous sugar-free, low-carb, blueberry jam with basil and lime:
1. Peel the zest of 2 limes, then squeeze the juice into a small bowl. Also, chop the basil leaves and put them aside in the fridge until used.
2. Wash the blueberries very well under running water, then let them strain.
3. Pour the apple juice into a large pot and simmer until reduced by half (25-30 minutes).
4. Add the blueberries and let them simmer for 20 minutes stirring constantly.


5. Now, add the lime zest and juice, the cardamon, and chopped basil leaves, and let them simmer for another 1 ½ hours stirring constantly with a wooden spoon.

6. Because I wanted a well-gelled jam, I simmered the jam for 2 hours over low heat stirring constantly. When it reaches the desired consistency, turn off the heat and pour the jam into sterilized jars.

7. Close the jars tightly and immediately place them with the lead down (10 min), to form a vacuum; then return to the normal position and allow to cool slowly until the next day, covering them with a dunst, and transfer to the pantry.
The jars with this fabulous sugar-free blueberry jam are kept in the cool pantry. After opening a jar, it must be kept in the fridge.
I’ve already making sugar-free jams for over 6-7 years and they last in the pantry for over 1 year.
