• 3 tbsp olive oil (divided)

• 10 large brown mushrooms

• 500 g chicken breast (skinless and boneless)

• 1/2 red pepper, diced

• 1 small red onion, diced

• 2 cloves garlic, minced

• 2 tablespoons grated carrot

• 1 egg

• ½ tsp salt

• ½ tsp pepper

• ¼ tsp paprika

• ½ tsp rosemary

• ½ tsp oregano

• 1/4 cup fresh parsley, chopped

• 6 basil leaves (chopped)

• 2 chopped dill threads

• 1 cup shredded cheddar cheese (divided)

INSTRUCTIONS for this healthy and delicious keto lunch:

1. We prepare the ingredients at hand so that everything goes very fast. Preheat the oven to 200 ° C. We clean the mushrooms with a dry towel. Mushrooms are not washed because they are soaked in water. It is not necessary to remove their skin, it depends on how clean they are. We take out their legs and chop them finely.

2. Peel a carrot, and grate it. Chop the onion and garlic as small as possible, then 1/2 of the bell pepper into cubes.

3. Pour 2 tablespoons of olive oil into a grill pan and fry the chicken breast seasoned with salt, pepper, and rosemary for 10 minutes (5 minutes on one side, 5 minutes on the other), let it cool shortly after we cut it into cubes.

4. Heat 1 tablespoon of oil in a pan and sauté the onion with the carrot and pepper. Put the chopped mushroom stalks over the cooked vegetables.

7. Take the pan off the heat, pour the mixture of cooked vegetables into a bowl with the diced chicken, the egg, the rest of the greens, and half the amount of cheddar cheese, and mix with a spatula until completely incorporated.

8. Season the mushrooms with salt and pepper and then use the composition to fill them and place the rest of the cheddar cheese on top of each mushroom.

9. Put the mushrooms in a tray lined with baking paper in which I poured 1 tablespoon of olive oil. Bake the stuffed mushrooms for 25 minutes.

10. Take the tray out of the oven, garnish with chopped parsley and fresh basil leaves and serve hot.
