1st Layer: Oreo Crust

2nd Layer: Cream Cheese + Orange Puree + Halved Grapefruit Slices All Around the Cake Cream

3rd Layer: – Grapefruit Jelly

4th Layer: Cheese Cream + Grapefruit Pieces

5th Layer:  Whole and Halved Oranges + Orange Jelly 

INGREDIENTS:

Crust ingredients:

  • 300 g Oreo (without cream)
  • 80 g unsalted butter
  • 2 tbsp raw cacao
  • 1 tsp orange extract.

Ingredients for the filling:

  • 350 g Mascarpone
  • 350 ml unsweetened heavy cream (32%)
  • 30 g of Stevia /sweetener
  • 15 g of gelatin
  • 1 pinch of salt
  • 1 tsp of orange essence
  • 1 tbsp orange juice
  • Pink bio food coloring.

Ingredients for the grapefruit puree:

  • 3 grapefruits (300 ml freshly squeezed juice)
  • 50 g fresh pulp cut into cubes
  • 7 g gelatin
  • 1 tsp Stevia sweetener.

Ingredients for the grapefruit jelly:

  • 300 ml grapefruit juice (freshly squeezed from 3 grapefruits)
  • 7 g of gelatin
  • 1 tsp Stevia sweetener.

Ingredients for the orange jelly

  • 500 ml orange juice (freshly squeezed from 7 oranges)
  • 10 g of gelatin
  • 1 tablespoon Stevia sweetener.

For decoration:

  •  2 Oranges and 2 grapefruits.

INSTRUCTIONS:

Make the crust:

1. Remove the cream, then crush the Oreo biscuits.

2. Melt the butter in a saucepan.

3. Add the Oreo crumbs, raw cocoa powder, orange extract, and melted butter to the chopper and mix until smooth.

4. Place the composition thus obtained in a 21 cm springform pan, press, and place in the fridge until the filling is ready.

Make the grapefruit puree:

5. The gelatin is left to hydrate in 50 ml of water for 10 minutes.

6. Blend the pulp, then put the juice in a pot on the fire, and add the Stevia sweetener, stirring constantly until it starts to boil. Remove from the heat, leave to cool slightly, add the bloomed gelatin, mix for a few seconds, then sieve, then leave to cool at room temperature.

Make the grapefruit jelly:

7. The gelatin is left to hydrate in 60 ml of water for 10 minutes.

8. Add in a pot on the fire, 500 ml of freshly squeezed grapefruit juice, and the Stevia sweetener, stirring constantly until it starts to boil. Remove from the heat, leave to cool slightly, add the bloomed gelatin, mix for a few seconds, sieve, then leave to cool at room temperature.

Make the filling:

9. The gelatin is left to hydrate in 70 ml of water for 10 minutes.

10. In a bowl add the heavy cream and stevia and mix for 3 minutes until peaks form.

11. Add the cream cheese and the melted gelatin and mix for 1 minute until it reaches a creamy consistency, finally add the orange essence and lemon juice.

12. Divide the cream evenly into 2 bowls. In a bowl add the grapefruit puree and the pink food coloring and mix lightly with a wooden spoon/spatula until completely incorporated, in the other bowl the composition will remain as such.

Assembling the Cheesecake:

13. Place halves of grapefruit slices vertically on the springform pan walls, then pour half of the grapefruit puree cream over the biscuit base, add the grapefruit pieces, level with a spatula, cover the composition with cling film, and place in the freezer for an hour to harden the cream.

14. Remove the cheesecake from the freezer, pour the grapefruit jelly, cover the composition with cling film, and place it in the freezer for 1 hour to harden.

15. Remove the cheesecake from the freezer, pour the rest of the cream, then add the orange pieces (50 g fresh orange pulp cut into cubes), cover the composition with cling film, and put it in the freezer for an hour to harden the cream.

Make the orange jelly: 

16. The gelatin is left to hydrate in 60 ml of water for 10 minutes.

17. Add in a pot on the fire, 500 ml of freshly squeezed orange juice, and the Stevia sweetener, stirring constantly until it starts to boil. Remove from the heat, leave to cool slightly, add the bloomed gelatin, mix for a few seconds, sieve, then leave to cool at room temperature.

Decorating the cheesecake:

17. Remove the cheesecake from the freezer, place whole slices and halves of oranges on the surface of the cake pour the orange jelly, cover the composition with cling film, and place it in the fridge for at least 6 hours, or better overnight.

When ready to serve, remove the cheesecake from the fridge, run a sharp knife around the edge of the springform pan, and release the sides. Place it on a cake stand, cut a slice, and enjoy this wonderful aromatic cheesecake.

Chilling Time:

To achieve the perfect no-bake cheesecake, chilling is key. It allows the dessert to be set properly, ensuring that you get clean slices without any collapse. 

A minimum of 6-8 hours in the refrigerator is recommended but overnight is ideal. This patience is rewarded with a firm yet creamy texture that holds its shape and delivers on taste.

Consistency:

Many home cooks worry about the consistency of their no-bake cheesecake, especially when working with gelatin or alternative gelling agents for the jellies. 

The trick is to follow the instructions precisely and to make sure the gelatin is completely dissolved after melting, before incorporating. 

Usually, a pack of 10 g of gelatin it’s enough for 500 g of composition, and it should be left to bloom for 10 minutes.

Sugar Substitutes:

For those concerned about the sugar substitutes affecting the taste, rest assured that modern sweeteners are designed to mimic the sweetness profile of sugar without the aftertaste.
